Blueberry Peanut Butter Porridge

I need COMFORT FOOD STAT!!!! Instant Pot to the rescue!
If you are anything like me, you have days where nothing seems to go right. I drop sh**, I swear... and well.. I want to eat biscuits and gravy with a side of Chicken Fried Steak. ( yes you read that right)
This is something I came up with that happens to comfort that need and stay within the Keto World.
1/4 Cup non sweet coconut flakes
1/2 Cup Organic Hemp Hearts
2 TBL unsweetened Peanut Butter
3 organic humane eggs
1/4 C filtered water
1 can organic coconut milk
1/2 teaspoon vanilla
pinch of Himalayan salt
2 TBL Liquid Date Sugar
dash of nutmeg/cinnamon or mix
2 tbl Buttah
1/2 cup organic blueberries ( big fat ones)
In your vitamix combine the coconut milk, peanut butter, eggs, vanilla, salt, date sugar and spices until blended like a smoothie..but don't treat it like a smoothie.. ew.
Saute butter coconut and hemp hearts until just brown and smelling lovely.
Add the ( not drinking) smoothie mix to the instant pot, stir well to combine.
Set to high pressure and cook for 1 minute, once it beeps, let the pressure release on its own for at least 4-6 minutes but no longer as it will overcook.
Serve with blueberries and a touch of heavy cream
